Ingredients:

8 Portobello mushrooms (washed and cut off stems)
2 lbs extra lean ground chicken
1pkg taco seasoning
8 tbsp fat free salsa
4 oz light marble cheddar cheese, grated
Toppings (optional)
4 cups shredded lettuce, jalepenos, sliced olives, fat free plain greek yogurt

1. Brown ground chicken in pan sprayed with cooking spray, add package of taco seasoning
2. Each portabello mushroom takes at least 1/2 cup of cooked meat, 1 tbsp of salsa and divide cheese between all 8 mushrooms
3. Bake at 375 for approximately 20-25mins
4. Top with toppings of your choice...if you choose to avoid the olives this recipe remains a 2pt per serving dinner. Pile up the lettuce and it ends up tasting like a taco salad once all of the ingredients mesh together on the plate. Delicious!
