This recipe is perfect for those busy days, maybe you're working late but you don't want to sacrifice a home cooked meal. Don't get me wrong I cave every now and then and pick up take out but when I can plan ahead and make my family a healthy home-cooked meal I definitely opt for that.
I work a 10-6 shift once a week and this dish helped me keep on track this week. I used my crock pot but you could make this in a large pot and simmer on low for a couple of hours. The chicken is so tender and flavourful. We usually have this over rice but you could have it with mashed potatoes, or even on it's own with some fresh crusty bread to soak up the delicious sauce.
Recipe makes approximately 10-12 cups

Ingredients:
1 small onion chopped
1 Tbsp minced garlic
4-5 chicken breasts, cut into broad chunks
3 cups of spinach or kale
2 cans chickpeas, drained
1 cup diced tomatoes (or more if you like)
1 Tbsp tomatoe paste
1 cups fat free chicken broth
1 Tbsp Vegeta vegetable seasoning
1 tsp Tumeric
1 tsp Cumin
1 tsp white pepper
1 tsp salt
1 tsp Portuguese hot pimento paste (optional)
1 tsp white pepper

2. Add all ingredients to crockpot and mix to combine.
3. Cover and cook on low for 8hrs.
4. If it doesn't thicken up enough for your liking, stir a tablespoon or 2 of cornstarch in (this doesn't affect the points) and stir in. This should thicken up the stew easily and quickly.
