Dark Chocolate & Cherry Loaf

                                


Recipe makes 2 loaves, 16 slices

Ingredients:
2 cups Kodiak Power Cakes mix
4 Tbsp Cocoa
2 tsp baking powder
3/4 cup Stevia
1 cup Dark Chocolate Silk Almond Milk
6 tsp Becel light
38gm Dark Chocolate
4 eggs, separated
1 1/2 cups frozen or fresh cherries, chopped 

Glaze: 
4 Tbsp Swerve Icing sugar
2 Tbsp unsweetened almond milk
1/2 tsp vanilla

1. Preheat oven to 350 and prepare 2 loaf pans with cooking spray.
2. Beat your egg whites with just a pinch of salt until they are whipped and peaks form, set aside.
3. In a microwaveable bowl - sorry folks lots of dirty dishes with this recipe - melt chocolate and Becel for 30 seconds in microwave. Remove and stir until chocolate is completely melted, set aside for just a minute. You don't want to add your yolks in this mixture until its cooled off just slightly.
4. In one large bowl add Kodiak mix, cocoa, baking powder and 1/4 cup of the Stevia. Stir ingredients are mixed together as one.
5. Add egg yolks one at time stirring consistently into the chocolate. Once you have all of the yolks mixed in well, add 1/2 cup of the Stevia and stir well. 
6. Using a spatula start folding the whipped egg whites into the chocolate. This becomes almost mousse like in texture.
7. Time to add the Dark Chocolate almond milk to the dry ingredients. This will be pretty thick until the chocolate mixture gets added.
8. Using your spatula slowly start adding the chocolate/egg white mixture into the batter. Fold it gently but ensure it is getting mixed in well. 
9. When you have a uniform batter add the chopped cherries and give it another stir. 
10. Divide the batter into the 2 loaf pans, bake for 35-40mins or until a toothpick comes out clean. 
11. While the cake is baking make your glaze - if you want it. The glaze doesn't add points to this recipe. 
12. Let the loaves cool completely and then add the glaze and serve.
