Triple Chocolate Zucchini Loaf

Recipe makes 2 loaves, 16-18 slices

Ingredients: 
2 cups of Kodiak mix
2 tsp baking powder
5 Tbsp cocoa powder
1/2 tsp cinnamon
3/4 cup Stevia
4 eggs
1 tsp vanilla extract
1/3 cup unsweetened applesauce
3 Tbsp I can't Believe its not Butter Light, melted
1 cup Dark Chocolate Silk Almond milk
1 1/2 cups (1 large zucchini) shredded, wrung out
34gm semi sweet chocolate chips

1. Preheat oven to 350, spray 2 loaf pans with cooking spray.
2. In one bowl add all dry ingredients - kodiak mix, baking powder, cocoa, cinnamon and stevia. Mix together to unify all dry ingredients.
3. In another bowl beat eggs until creamy, add vanilla, applesauce, melted margerine, almond milk. Beat well. 
4. Slowly start adding the dry ingredients into the wet ingredients, mixing consistently. 
5. Using a wooden spoon mix in the shredded zucchini. Make sure that you have pressed out as much water from the zucchini before adding to your batter. 
6. Divide batter between both loaf pans. Top each loaf with chocolate chips. 
**Just an FYI...I have made this recipe this way and have also melted the chocolate chips into the hot melted Becel and mixed right into the batter. I actually prefer it this way because it gives it even a richer chocolate flavour. But it's great with the chips on top as well.
7. Bake for 50-60 mins, until toothpick comes out clean. Remove from heat and allow to cool on cooling rack. Enjoy.
