Apple Cinnamon Crumble cake

**I used Gluten Free flour in my recipe, using regular flour is the same WW SP.

Ingredients:
2 cups Gluten Free all purpose flour or regular flour
3 Tbsp Corn starch
1 Tbsp baking powder
1/2 tsp salt
1 cup monk fruit sweetener or 3/4 cup stevia
1 Tbsp cinnamon
1 cup plain unsweetened almond milk
1/2 cup plain fat free greek yogurt
1 tsp vanilla
2 eggs

Apples: 2 medium apples, peeled and thinly sliced, tossed in 1 Tbsp cinnamon

Topping: 4 Tbsp I Can't Believe It's Not Butter, 8 tsp brown sugar and 1/3 cup of large oats - Mix together.


1. Preheat oven to 375. Prepare a 9x13 pan with cooking spray. 2. In a bowl mix together flour, baking powder, corn starch, salt, cinnamon and set aside. 
3. In another bowl beat eggs with monk sugar and vanilla, add the almond milk.
4. Slowly start mixing the wet ingredients into the flour mixture. When well combined pour into baking pan.
5. Start to layer your apple slices which have already been tossed in cinnamon to the top of the batter. 
6. Using a teaspoon starting dropping the oat topping over the apples. 
7. Bake for 30-35mins, until a toothpick comes out clean. 
8. Serve hot with ice cream, or allow to cool and serve with your tea or coffee. Delicious!
