Stewed Chicken with White Beans and Spinach

Recipe makes 6 servings

Ingredients:

1 onion sliced
1 Tbsp minced garlic
2 Tbsp Olive oil
4-5 skinless, boneless chicken breast, cubed
1 1/2 cups of sliced mushrooms 
3 cans of white kidney beans, mostely drained
5 cups of spinach
1 tsp salt
1 tsp pepper
1 1/2 tsp clubhouse Garlic plus seasoning
1/2 tsp cumin
1. In a stove top pan add the olive oil, onions and garlic. After a couple of minutes add the cubed chicken and seasonings. Mix well to coat.
2. When chicken appears mostly cooked add the beans and stir. Cover and bring to a simmer. Turn down to a low-med heat. 
3. Add spinach and mix it into the rest of the dish. Cover again and let cook a few more minutes. When spinach starts to wilt taste the sauce and adjust by adding more seasoning if needed - salt or pepper.
4. Total cooking time is approximately 35 minutes.
5. Serve this over rice, cauliflower rice or on its own as I did with some fresh bread.
