A co-worker of mine brings "monster mash" to work every day for lunch. Little did I know this was a thing...I thought it was just his own cute name for the recipe lol. Most monster mash recipes online all had mashed potatoes and ground beef based. This is my healthier take on it.
Recipe makes 5 - 1 1/2 cup servings
Prep time: 20mins, plus approx. 25-30mins to roast your squash (this can be done in advance) I also used precooked, leftover turkey.
Cook time 20-25mins

Ingredients:
1 butternut squash
1 small onion chopped
1 Tbsp minced garlic
2-3 cups of chopped broccoli
3 cups spinach
2 cups shredded or diced cooked turkey breast
2 cups shredded or diced cooked turkey breast
1/4 cup fat free chicken broth
1/2 tbsp vegeta seasoning
Salt and Pepper to taste

2. In a pan on stovetop sprayed generously with cooking spray add the onions and garlic. Saute on medium heat just until the onions start to become translucent. Add the chopped up broccoli.
3. Start adding the chicken broth a little at a time. I used this mainly because I'm not using any oil or other liquid and I don't want my broccoli to burn or brown in the pan.
4. Add the turkey, spinach and rest of broth when the broccoli is tender. Mix everything well and let the spinach wilt. I added my spices now, vegeta, pepper and a little salt.
5. Once the spinach has wilted to your desired texture you add the "mashed" butternut squash, add salt and pepper and mix it in well. Have a taste, if you need to add more salt or pepper do so.
