Ingredients:

1 small onion, chopped
1 -2  tsp minced garlic
1 tbsp olive oil
1 cup Quinoa, rinsed
1 cup fat free chicken broth
1 can diced tomatoes
1 can corn kernels, drained
1 can black beans, drained, rinsed
1 large or 2 small peppers, chopped
1 tbsp chili powder
1 tsp cumin
1 tsp salt
1 tsp pepper
2 tbsp chopped cilantro
Juice of 1 lime

1. In a large, deep skillet add olive oil and heat pan on medium heat. Cook onions until they are translucent. 
2. Add quinoa and toast in pan for a minute before adding rest of ingredients.
3. Add the remaining ingredients and let come to a boil. Once it comes to a boil, turn down heat and allow it to simmer until the quinoa is cooked and there is no liquid remaining. 
4. Stir, "fluff", the mixture. Mix in the cilantro and lime juice.
