Butternut Squash and Carrot Soup (GF)


Ingredients:
1 small onion chopped
1 Tbsp minced garlic
6 cups butternut squash, chopped
2 cups carrots peeled and chopped
2 heaping Tbsp diced tomatoes
1 carton of fat free chicken broth (or vegetable)
8 cups of water
2 Tbsp Vegeta
1/2 - 1tsp white pepper
1 tsp thyme
salt to taste

1. In a large pot add a splash of the broth and add the chopped onions and garlice. Cook until translucent and then add the diced tomatoes, and thyme 
2. Add the rest of the broth and the chopped butternut squash and carrots, cover with the water. Add the white pepper and Vegeta vegetable seasoning. 
3. Bring to a boil and then lower heat and simmer until all vegetables are tender and cooked through. 
4. Using a hand blender puree the vegetables. If it seems too thick add some more broth or water. I bought this Chefman Immersion blender on Amazon and it is great. The blade detaches with an easy twist for easy cleaning. And there are other attachments you can purchase for this appliance
5. Add salt to taste. 
6. Serve with our 3 Cheese Cornbread.
