**Pts are the same if using regular white flour or Kodiak Power Cakes mix instead of GF Flour
Ingredients:
1 cup Gluten Free Flour
1 cup Gluten Free Old fashioned Rolled Oats
1 tbsp baking powder
1 tsp baking soda
Pinch of salt
1 1/2 tsp cinnamon
1/4 cup brown sugar
1/4 cup Stevia
2 large eggs
1 tsp vanilla extract
4 tsp I Can't Believe Its Not Butter Light (ICBINB), melted
4 tsp unsweetened applesauce
1 cup unsweetened Almond milk
1 zucchini grated and liquid squeezed out
1 large or 2 small apples peeled and chopped into small pieces
1 large or 2 small apples peeled and chopped into small pieces
1 tbsp cornstarch with 1 tsp cinnamon (mix and reserve in separate bowl)
2. In one big bowl mix flour, oats, baking powder, baking soda, salt and cinnamon. Set aside.
3. In another big bowl, beat eggs and sugars together until creamy. Add vanilla, melted ICBINB, applesauce and half of the almond milk. Mix well until well combined.
4. In the bowl that you set aside earlier with cornstarch and cinnamon add in the chopped apples. Toss and coat the apple pieces with the dry mixture. This will help to ensure your apple pieces don't sink to the bottom of your muffins.

6. Fold in the zucchini followed by the apples. Fill muffin tins to the top.
7. Bake for 20-25 mins or until a toothpick inserted comes out clean.
