Quinoa Pizza Casserole (GF)

Who doesn't love the smell of homemade pizza? Well this dish smells just like you have a pizza cooking in the oven, minus the crust. Up until now I hadn't reaally used quinoa much so i wasn't entirely sure how this would turn out. It's delicious and the beauty of it is you put whatever toppings you want on it. If you are on myWW and are altering the recipe this might alter the points so just keep that in mind.

Recipe makes 6 large servings

Cook Time: 35-45mins

Ingredients:
2 cups uncooked Quinoa, rinsed
2 cups tomatoe sauce (no sugar added)
2 cups of water
1 tsp salt
1 1/2 tsp Italian seasoning
2 Tbsp fat free broth
1 small onion chopped
1 pepper chopped
3/4 -1 cup sliced mushrooms
3 slices of Turkey bacon cut into pieces
2-3 Tbsp black sliced olives
40gm (about 18 slices) of Pillers Turkey Pepperoni slices
30gm shredded parmesan
30gm Galbani mozzarella light cheese


1. Preheat oven to 375. Spray a 9x13in dish with cooking spray. 
2. Pour the rinsed quinoa, tomatoe sauce and water into the dish. Stir in salt and italian seasoning. Set aside.
3. In a pan saute the onions, mushrooms, peppers in the broth. Add the turkey bacon. When the turkey bacon is cooked, browned, remove from heat and spread this over the quinoa. 
4. Put on the turkey pepperoni and olives and the cheeses. 
5. Bake for 35-45mins. This may vary depending on your oven. If it is still fairly liquidy leave in oven a few more minutes. Turn off oven, open oven just ajar and let the casserole sit in the oven for 5-10min until quinoa is set.  Serve with a side salad or on its own. Enjoy.
