Homemade Refried Beans (GF)

Recipe makes 8-10 servings, approx 1/2 cup servings
Prep/Cook Time: 20mins

Ingredients:
2 cans of Pinto Beans (4 3/4 cups) - drained and rinsed
1 tbsp minced garlic
1/2 cup chopped onion
1 tsp taco seasoning
1/2 tsp cumin 
salt and pepper taste
1 tsp olive oil
cooking spray

1. Spray pan with cooking spray and add 1 tsp of olive oil, add onions and garlic, cook until softened
2. Add pinto beans and cook until heated through, remove beans from heat and blend in blender or use hand blender until well blended and smooth in texture
3. Mix in taco seasoning and salt and pepper to taste.
