Lemony Cranberry Coconut Bars (GF)

So much to love about these bars. Lemon and cranberry and coconut...oh my. While these are baking the house smells amazing. The flavour from the fresh lemon juice and zest makes all the difference in this recipe.

Ingredients:
1 1/4 cup Almond Flour
3/4 cups Large Flake Oats
4 Tbsp unsweetened Coconut flakes
1 tsp baking soda
3 Eggs
1 tsp Vanilla Extract
1/2 cup Stevia/Truvia
5 tsp Brown Sugar
Zest of 1 lemon
Juice of 1/2 lemon
1/2 cup dried cranberries


1. Preheat oven to 350. Spray a 9x13 pan with cooking spray and set aside.
2. In one bowl add almond flour, oats, baking soda and coconut. Mix to combine and set aside. 
3. In an another bowl beat eggs with vanilla, brown sugar and stevia. Add lemon zest and juice, stir well. 
4. Mix the egg mixture into the flour mixture and then foldin your cranberries. 
5. Spread the batter evenly into the pan. I like to cover with a piece of wax or parchment paper and use my hands to press it down evenly into the pan. Bake for 20mins or until golden brown.
6. Remove from oven and allow to cool before cutting.
