This is my second "croquette" recipe. I just love these because they are quick and easy. You can enjoy these as an appetizer, snack or even as part of a meal with rice or a salad. And hello...did someone say taco?

Ingredients:
1 chicken breast, cooked and finely chopped (I ran mine through food processor)
1 can chickpeas, drained and rinsed
1/2 can black beans, drained, rinsed
1/2 cup salsa
1 egg
1-2 Tbsp chopped cilantro
Juice of 1/2 lime
1 Tbsp chili powder
1 tsp cumin
1 tsp salt
1 tsp white pepper
1 Tbsp diced jalepeno (optional)
1 Tbsp masa harina (corn flour)
1. Preheat oven to 400. Line baking sheet with parchment paper.
2. In food processor add chickpeas and black beans, pulse until you get smooth consistency.
3. Put beans in a bowl and add remaining ingredients and mix well. Taste and adjust flavour as you like.
4. Using a tablespoon scoop up some mixture and gently form into an oval shape in your hands and place on parchment paper.
5. Serve with Fat free plain greek yogurt mixed with salsa.
