Tex Mex Meatloaf (GF)




Mmm Tex Mex...am I right? You are going to find that i have quite a few recipes that are Tex Mex or have a latin flavour. I love taking average every day recipes and giving them a Tex Mex twist. Those are always guaranteed to keep the family quiet during dinner, and you know what that means right? It means they are too busy loving it!

Ingredients:
1lb Extra lean ground pork
2lb Ground chicken breast
1/2 cup onion, finely diced
1 Tbsp minced garlic
1/2 cup salsa (fat free)
1 tsp cayenne 
1/2 Tbsp cumin
1/2 Tbsp salt
1/2 Tbsp chili powder
1/2 Tbsp Adobo seasoning
1 egg
1/2 cup breadcrumbs (i used 4C gluten free breadcrumbs)
1 can black beans, drained 
1 can corn, drained
60gm Great Value 15% M.F. Light Mozza-Cheddar shredded cheese






1. Preheat oven to 375. Spray a 9x13 dish with cooking spray. 

2. In a bowl combine all of the ingredients for the meatloaf and combine well.  
3. Press the meat mixture into the 9x13 dish evenly. Save cheese for the end.
4. Bake for 30mins, Remove from oven and sprinkle evenly with cheese. Return to oven for another 5mins. Let sit for a couple of minutes before cutting to serve. 
5. Serve with plain fat free greek yogurt, salsa and jalepenos.
