Eating on the lighter side can sometimes get boring, but it
doesn't have to. I have almost completely cut out red meat for the most part
and I am still able to make a variety of delicious homemade meals that the
family loves.
This dish was definitely a hit even with my picky teenage
daughter who isn't a fan of her food "mixing" when vegetables are
involved.

Per Serving:

Ingredients:
4 Bell Peppers, split down middle lengthwise and seeds
removed
2lbs ground chicken breast
1 Tbsp minced garlic
1 1/2 tsp salt
1 1/2 tsp black pepper
1 1/2 tsp crushed red chili flakes
1 Tbsp parsley, chopped
8 Tbsp Kraft Hickory BBQ Sauce
75gm Saputo Mozzarellissima Mozzarella cheese, shredded
2. In a large bowl mix together the ingredients for the meat
- chicken, onion, garlic and seasoning/spices. Mix until everything is well
combined.
3. Fill each pepper "shell" evenly to the top. Put
in oven and bake for about 30mins.
4. Remove from oven and top each pepper with 1 Tbsp of the
bbq sauce and top each one with cheese. Return to oven for about 10mins or
until cheese is completely melted and it starts to brown slightly.
5. Remove from heat and enjoy with favourite sides. Since
this is such a low point dinner option I served mine with rice and corn. Enjoy.
