This recipe has quickly become a family favourite. My daughter isn't a fan of mushrooms so when I make it now I usually eliminate the sliced mushrooms, and its delish either way. The roasted red peppers in this recipe give the sauce an amazing colour and flavour. This sauce is also amazing on pasta with grilled chicken, and it is so easy to make.
If you are on myWW be sure to look for roasted red peppers packed in water, not oil and that they don't contain added sugar.

Ingredients:
6 skinless, boneless chicken breasts, sliced in half

1 Tbsp Olive oil
1 1/2 tsp Club House Garlic Plus seasoning
1 tsp salt
1 tsp pepper
1 tbsp dried parsley
1 8oz pkg of whole white mushrooms, cleaned and stems removed (optional)
Sauce:
1 cup Sliced Roasted red peppers (in water, no sugar), approximately 3-4 peppers.
1 can Cream of mushroom soup
1-2 cloves of garlic, sliced
pinch of salt and white pepper
pinch of salt and white pepper

2. In pan on stove top add olive oil while its heating up. Add the pieces of chicken top with all of the spices and then using a wooden spoon lightly toss everything in the pan to coat the chicken well with the olive oil and spices.
3. Cook on a med-high heat until chicken starts to brown, but it doesn't need to be completely cooked through.
4. While chicken is cooking, preheat oven to 350. And in a blender, add the ingredients for the sauce. Blend until smooth and creamy.
5. Turn off stove. If you are using a casserole dish transfer the chicken to the dish, top chicken with mushroom slices if using, and pour the Roasted Red Pepper sauce over the chicken.
6. Bake for about 20 mins, remove from heat and serve with your favourite side.
