Chocolate Almond Pie (GF)


My husband and I like to entertain. We enjoy having people over for dinner and sharing a nice meal, a few glasses of wine and catching up with friends. But what is a nice dinner without a delicious dessert? When I started myWW (formerly Weight Watchers) I decided I wasn't going to let this change the way we live as a family. I don't make myself separate meals and if we have guests over I make desserts that I can enjoy. 

This Chocolate Almond Pie tastes a bit like a chocolate cheesecake without the cream cheese. The crust is similar to an almond flavoured "torte" base. This dessert is guest worthy when you dress it up with some whipped cream and fresh raspberries. 
Recipe makes 10-12 slices

Ingredients:
Crust:
2/3 cups Almond flour
1/8 cup Flour ( I used Bob's Red Mills All Purpose GF Flour)
2 Tbsp Stevia
3 Tbsp Swerve Icing sugar
2 eggs, beaten
1 Tbsp Almond Extract

Chocolate filling: 
3 eggs, beaten
1 tsp vanilla
2 cups Fat free plain greek yogurt
2 tsp sugar
1 Pkg Chocolate fat free pudding mix
1 Tbsp Cocoa powder

1. Preheat oven to 350. Spray a 8-9inch pie plate with cooking spray and set aside.
2. In one bowl mix together the ingredients for the crust, adding the egg and almond extract last. The crust mixture is not like a doughy texture it is more like a thick batter. Spread the batter in the pie plate. Spread it evenly and up the sides of the plate as well. 
Bake for 15mins, remove from oven. 
3. While crust is baking prepare the chocolate filling. Beat the filling ingredients in order as listed. Pour into pie crust and bake for 40mins. The filling should be firm but centre should have a slight jiggle to it. 
4. Let it rest for at least an hour and then chill for at least 2hrs before serving.
