Crustless White Chocolate Cheesecake Bars (GF)

Ingredients:
16oz fat free cream cheese or 95% fat free
1/2 cup fat free plain Greek yogurt
2 eggs
2 tsp vanilla extract
1/2 cup Stevia
1 pkg fat free White Chocolate Jello Pudding mix

Toppings Optional and points very depending on plan: 
1 cup of fresh or frozen strawberries - pureed in blender
1 Tbsp Light Cool whip

1. Preheat oven to 325. Spray a 9x9 pan with cooking spray and set aside. 
2. Using your electric mixer cream together the cream cheese and greek yogurt until well combined. 
3. Continuing to beat and add in the vanilla, stevia and egg one at a time. Mix until it is nice and creamy. Add the package of pudding mix and mix until completely blended together. 
4. Pour mixture into the pan and spread evenly. Bake for 40-45 minutes or until the middle is set but still has a bit of a jiggle. Let cool and refrigerate for 3-4 hours. 
5. Slice into 9 even pieces and top with your favourite topping. I blended strawberries to make a puree and then added a tablespoon of light cool whip at 0SP under the Blue plan.
