Recipe makes 6 - 2 cup portions

Rice:
1 1/2 cups uncooked rice
3 cups of water
1 bay leaf
1 tsp cumin
1/2 tsp salt
Chicken:
4-5 chicken breast, cubed
1 pkg taco seasoning
1/4 cup fat free chicken broth

8 Tbsp salsa
1 can black beans, drained
1 can Del Monte Corn Medley, Mexican style
2-3 Tbsp chopped Cilantro
1 tsp minced garlic
Zest of 1 lime
Juice of 1/2 lime
1. Spray a deep pan with cooking spray. Add the garlic and cubed chicken and start cooking on medium heat. In a another pot start cooking the rice.

3. Start adding the remaining ingredients - salsa, beans, corn. Stir in the lime zest and squeeze in juice from 1/2 a lime. When the rice is done cooking add to the pan and mix well. I add about half of the cilantro last and saved the rest to sprinkle on top. You can also leave the rice separate and serve the chicken and beans over the rice.
