If you enjoy the combination of chocolate and mint you will love these muffins. These are probably my favourite! When I first made this recipe I had them down to 2SP per muffin but they needed a little something more so I added the chocolate chips. It isn't a lot of them but just enough to give it just that little extra love. At only 3SP per muffin it is worth it.

**You could definitely change it up if you can't find the Kodiak Cakes Protein Pancake flour by using regular white flour. For myWW friends this does add 1SP.
**If you can't find Kodiak at Costco- it is hit and miss - Zehrs stores do sell a PC version of a high protein pancake flour in their nutritional foods section.

2 cups Kodiak Power Cakes mix
2 tsp baking powder
1 tsp baking soda

1 cup Dark Chocolate Silk Almond Milk
6 tsp Becel light
38gm Dark Chocolate ( I used PC Extra Dark Chocolate Bar)
4 eggs
1-2 Tbsp Mint Extract
30gm semi-sweet chocolate chips

1. Preheat oven to 375 and prepare muffin tins.
2. In one mixing bowl beat eggs with Stevia until creamy. Beat in the almond milk. Add Mint extract stir in and set aside.
3. In a microwaveable bowl melt chocolate and Becel for 30 seconds in microwave. Remove and stir until chocolate is completely melted, set aside for just a minute.

4. In another large bowl add Kodiak mix, cocoa, baking powder,
baking soda and stir until they are combined, set aside.

5. Time to add the melted Dark Chocolate to the other wet ingredients. Mix well.
6. Slowly start adding the dry ingredients into the wet ingredients. Beat well.
7. Using a tablespoon fill each muffin tin about 3/4 full, about 2 heaping tablespoons.
8. Evenly distribute the chocolate chips on each muffin, about 5-6 for each muffin. 9.Bake 25-30mins or until a toothpick comes out clean.

10. Remove from muffin pans and allow to cool on cooling rack.
