Ingredients:
1 cup Flour ( I used Bob's Red Mills 1-1 All Purpose GF Flour)

1 cup Large rolled oats
2Tbsp Stevia or 2 Tbsp Skinny Syrup Pumpkin spice or Cinnamon Dulce
1 tsp cinnamon
pinch of salt
1 tsp baking soda
1 tsp baking powder
3 mashed ripe bananas- the riper the better
3/4 cup grated carrot (1 lrg carrot)
3/4 cup diced apple (1 med apple)
1 1/2 Tbsp unsweetened coconut
2 Tbsp chopped walnuts
1 egg, beaten
5 tsp melted Becel Light

2. In one bowl mix the dry ingredients together and set aside.
3. In another bowl add grated carrot, diced apple, coconut and walnuts, add mashed banana and mix well. Add the beaten egg and melted Becel, mix well.

5. Spoon the batter onto the baking sheet. I used a scoop that I have at home that measures 2Tbsp. Keep a little space between the cookies because they will expand.
6. Bake for 18-20mins. The cookies will be soft out of the oven. Remove from baking sheet and let cool on cooling racks.
