Cauliflower Rice (GF)




A lot of people buy Cauliflower Rice at the grocery store in the freezer section which works fine, but I prefer to must make my own. Partly because I am frugal, and I don't like to pay extra for something that I can easily make myself for half the price. I use my Black & Decker Chopper which is amazing! It doesn't take up a huge amount of space in my kitchen or counter top and it works like a charm. For one whole cauliflower I usually quarter it and then chop it into smaller pieces. And I whiz it for literally seconds, maybe 10-15seconds. I've tried grating it with a grater but I don't love the consistency. Using the chopper I get a grainy consistency which is more like rice to me. 



To cook cauliflower rice I spray my pan with cooking spray and usually saute some onion about 1/2 cup and garlic (2 tsp minced) in a couple of splashes of fat free vegetable broth. I use the broth to avoid using oil or butter. I add the cauliflower rice, season it with salt, pepper, vegetable seasoning or whatever seasoning goes with whatever meal I am pairing it with and saute it all for just about 3-4mins. I don't add any additional liquid. You don't want mushy or overcooked cauliflower rice.
