Fruit Pizza





Recipe makes 8 generous slices
Prep/Cook Time: 35-40mins

Ingredients:
Crust:
1 cup of sifted flour, I use gluten free 
3/4 cup of fat free vanilla yogurt
3/4 cup of fat free plain greek yogurt
3 tbsp of cocoa powder
3 Tbsp Stevia

This is a modified version of the 2 ingredient dough. The vanilla yogurt and cocoa give it the perfect flavour- not too sweet but it doesn't taste like pizza dough. 

This dough is very sticky so be prepared to use a lot of cooking spray on your hands. I used a standard sized pizza pan lined with parchment paper. 


Preheat oven to 375. Mix above ingredients and spread evenly in round pizza pan. 


Bake for 18-20 mins. Let cool completely on wire rack. Transfer to serving dish.


Top layer:


1 cup low fat cream cheese
1 cup 95% fat free cool whip
1 tsp vanilla

Sliced fruit of your choice for toppings I used: 
1 cup sliced strawberries
1/2 cup blueberries
1 ripe golden kiwi

Beat cream cheese and vanilla make sure to get it nice and smooth. 

Fold in the cool whip.

I prepared this while the crust was in the oven and then put it in the fridge until the crust was cooled off completely.


When the crust is cool spread the cream layer evenly on the crust.


Top with your favourite fruit and enjoy this light and fresh dessert!!
