These bars turned out delicious, not overly sweet, which I prefer. If you like things a bit sweeter feel free to add more of the Stevia. These were really easy and quick to throw together which is just my style! Now that I have a pretty good base my muffins, cakes and bars recipes are getting a bit easier to throw together. I did mean to add a bit of cinnamon to this recipe but forgot all about it. Tastes great as is so I don't think I'll change it.
Recipe makes 15 bars

My Fitness Pal- Cal: 117, Fat: 3g, Carbs: 18g, Protein: 6g
Ingredients:
1 cup oats
1 1/2 cups Kodiak Power Cakes Protein mix
3 tsp baking powder
Pinch of salt
2 eggs
1 tsp vanilla extract
1/2 cup Stevia
1/2 cup Fat free plain greek yogurt
1/2 cup unsweetened applesauce

6 tsp Becel Light Margerine, melted
1 cup diced strawberries
1 cup chopped rhubarb
1 Tbsp lemon juice
8 tsp brown sugar
1. Preheat oven to 375 and spray a 9x13 pan with cooking spray.
2. Take the diced strawberries and rhubarb and put in a bowl, toss with lemon juice. Sift the brown sugar over top and mix it through, coating the fruit. Set aside.
3. In one bowl mix together the oats, Kodiak mix, baking powder and salt. Set aside.

5. Start alternating the dry ingredients and the almond milk, mixing continuously. Lastly, fold in the strawberries and rhubarb.
6. Pour into your prepared pan and bake for 35mins. Allow to cool and enjoy.
