Sweet Potato Nachos

These nachos are just the thing for a weekend spoiler 
but easy enough to pull off any day of the week!

Recipe makes enough topping for 9"x11" baking tray, this was counted as 4 to 6 servings.
Prep Time: 15 Minutes
Total Cooking Time: 30-40 minutes

WW SP and Calories are calculated without the chips as amount could vary depending on what you use.

Ingredients:
1 large sweet potato, diced
1 packet of taco seasoning (I use Old El Paso SMART Fiesta Taco Seasoning)
1 can of black beans, drained and rinsed
1 can of corn niblets, drained and rinsed
3 green onions, chopped
100gm light old cheddar cheese
1 Bag Nacho chips (I use Tostitos Bite Size Rounds)

1. Saute sweet potato in a pan with a touch of water to help create steam to cook potatoes
2. Add in the taco seasoning and stir to coat
3. Add in black beans and corn niblets and stir to combine
4. Remove from heat once the potatoes are cooked
5. In a 9" x 11" baking tray add a layer of the corn chips
6. Top with half of the sweet potato mix
7. Sprinkle half of the cheese and half of the onions on top
8. Repeat with another layer of tortillas and sweet potato mix ending with cheese
9. Place under the broiler for about 5-7 minutes or until cheese is melted.
10. Remove from oven and sprinkle remaining green onion on the top.

Serve immediately with fat free salsa, fat free plain greek yogurt and jalepenos! 

Special Note: Butternut squash can be subbed in for the sweet potato for lower point value.
