Ingredients:
2 1/3 cup flour ( I used GF flour, Pts are the same)
1 tsp baking soda
2 tsp baking powder
1 tsp cinnamon
6 tbsp I Can't Believe its not Butter Light
3/4 cup Stevia
8 tsp Brown sugar
2 eggs
3 tbsp Rum extract
1/4 cup unsweetened applesauce
2 mashed bananas
1. Preheat oven to 400. Prepare cookie sheets with parchment paper.
2. In one bowl combine the flour, baking soda, baking powder, cinnamon. In a second bowl mix the margarine, Stevia, brown sugar, applesauce, rum extract until creamy. Mix in the eggs and mashed bananas.
3. Slowly combine the dry ingredients with the banana mixture. This batter is thick but not thick enough to roll in your hands. You will need a scoop. I use a 2tbsp measured scoop.
4. Scoop the batter an inch apart and bake for about 10-12mins. When you remove from oven sprinkle with a Stevia/cinnamon mix.
