Chocolate Walnut Zucchini Muffins or Cake



Recipe makes 16 muffins or portions

Ingredients:
2 cups of flour or Kodiak Protein Pancake mix
6 Tbsp Cocao
1 Tbsp baking powder
1/2 cup Stevia
1 tsp vanilla
4 eggs
1/2 cup plain fat free greek yogurt
1 cup dark chocolate Silk almond milk
1 mashed banana
1 1/2 cups of shredded zucchini (wrung out)
75gm walnut pieces
60gm semi-sweet chocolate chips

1. Preheat oven to 375 and prepare your cupcake tins. I have also made this in a 9x13 baking pan and cut into 16 generous portions. 
2. In one bowl sift in the flour or kodiak mix, baking powder, and cocao. Mix until combined.
3. In a separate bowl add the stevia and eggs, and beat well until creamy. Add  vanilla, almond milk and greek yogurt. Beat well
4. Slowly add to the dry ingredients. Mix well and then add the mashed banana and the zucchini. Continue stirring by hand and fold in the walnuts and chocolate chips.  
5. Fill the cupcake tins or baking pan and bake
 for 25-30 mins or until toothpick comes out clean.
