Ingredients:
2 cups of flour or Kodiak Protein Pancake mix

1 Tbsp baking powder
1/2 cup Stevia
1 tsp vanilla
4 eggs
1/2 cup plain fat free greek yogurt
1 cup dark chocolate Silk almond milk
1 mashed banana
1 1/2 cups of shredded zucchini (wrung out)
75gm walnut pieces
60gm semi-sweet chocolate chips


3. In a separate bowl add the stevia and eggs, and beat well until creamy. Add vanilla, almond milk and greek yogurt. Beat well.
4. Slowly add to the dry ingredients. Mix well and then add the mashed banana and the zucchini. Continue stirring by hand and fold in the walnuts and chocolate chips.
5. Fill the cupcake tins or baking pan and bake for 25-30 mins or until toothpick comes out clean.
