Ingredients:
1 onion, chopped
1 Tbsp minced garlic
1 cup diced carrots
2 Tbsp olive oil
4 boneless, skinless chicken breast - diced or shredded if precooked.
1 can (796ml) diced tomatoes (no sugar added)
1 can white kidney beans
6-8oz spinach, chopped
1 Tbsp dried oregano
1 Tbsp dried basil
1 tsp cumin
1 tsp rosemary
1 carton of fat free Chicken broth
2 cups of water
1 knorr chicken flavour cube
Salt and Pepper to taste
1. In a large pot add the olive oil, chopped onion and minced garlic. Cook over medium heat. You don't want to burn the garlic.

3. Add all of the spices and mix well to coat the chicken. Add the diced carrots and 1 cup of water (reserve the other cup of water). At this point stir in the knorr cube.
4. After cooking for about 5-7mins add the can of diced tomatoes and chicken broth. Also add the can of kidney beans. Let this simmer for about 10-15mins and then add the chopped spinach. Add the other cup of water if you feel it needs it.
5. Continue to simmer on low heat for another 10mins and then turn heat off. Taste it and check if it needs any more salt and pepper. Keep covered until ready to serve.
