**WW points and Calories/Macros vary depending on the brands of ingredients you use. It is suggested that if you follow a diet plan that you enter your ingredients into your tracker for accuracy.
Ingredients:
1 cup oats
1/4 cup flour ( I used GF flour)
1 Tbsp baking powder
4 Tbsp cocoa
1 egg
3/4 cup Stevia
1 Tbsp vanilla extract
1 1/2 cups pureed pumpkin
1/4 cup applesauce
1/4 cup water
40gm chopped walnuts
1. Preheat oven to 350 and coat bundt pan with cooking spray. I believe the one I used is 8".
2. In one bowl combine the dry ingredients and set aside.
3. In another bowl beat egg, stevia and vanilla. Add in the pureed pumpkin and applesauce. Mix well and then mix in the water. If you feel your batter is still too thick you can add a bit more water. It is the texture of brownie batter.
4. Fold in 25gm of the walnuts into the batter and pour into pan. Sprinkle the rest of the walnuts on top and press them in just slightly.
5. Bake for 45 - 50min, until baked through.
