Ingredients:
1/2 cup chopped onions
1 Tbsp minced garlic
1 large head of cauliflower, chopped
2 1/2 cups Fat Free Vegetable broth
1 cup plain unsweetened almond milk
3-4 cups of water
2 Tbsp Vegeta seasoning
1 tsp white pepper
2 cups finely chopped kale
4 Tbsp Kraft Light grated parmesan cheese
Salt - season to taste
1. In a pot add onion and garlic with a splash of the fat free broth. Saute until onion is cooked.
2. Add chopped cauliflower, the broth, almond milk and water. Stir in the vegeta and white pepper and a pinch of salt. Let this come to a boil then turn down and continue to simmer until the cauliflower is soft and cooked through.
3. Using a hand blender, blend everything until completely smooth. Stir in the parmesan cheese.
4. Lastly add the chopped kale. If you will be serving immediately allow the kale to cook for another 10mins to cook through. If not serving right away, turn heat off and cover pot with lid. The kale will cook in the heat of the soup.
