Red Pepper and Chickpea Soup

Recipe makes 8 x 2 cup servings

**WW points and Calories/Macros vary depending on the brands of ingredients you use.  It is suggested that if you follow a diet plan that you enter your ingredients into your tracker for accuracy. 


Ingredients: 
Gloria Pickled Red Peppers
1/2 cup diced onion
1 Tbsp minced garlic
8 cups (2 cartons) of fat free vegetable broth 
2 cans of chickpeas (I don't drain mine) 
30gm or 2 pickled red peppers 
1.5 tsp Vegeta seasoning     
.5 - 1tsp white pepper
Salt to taste

1. In a pot add the onion, garlic and a splash of vegetable broth. Saute until they soften. Add remaining vegetable broth.
2. Add the chickpeas and red peppers (the ones i used are pickled whole, I cut them into strips). 
3. Add Vegeta, and white pepper and about a tsp of salt. Let it come to a boil and then bring heat down, allow to simmer for about 20mins. 
4. Using a hand mixer puree everything until you get a nice smooth consistency. Add more salt or pepper as needed.
