Vanilla Lemon Poppyseed Muffins

Ingredients: 

3/4 cup Oat flour, sifted
3/4 cup Gluten Free all purpose flour, sifted
2 tsp baking powder
1 pkg Sugar free Vanilla pudding mix
2 eggs
1/4 cup Stevia
2 tsp vanilla
Zest of 1 lemon
Juice of 1 lemon
6 tsp Becel Light, melted
1 1/2 cups of unsweetened vanilla almond milk
1 Tbsp poppyseeds

1. Preheat oven to 375 and prep muffin tins.
2. In one bowl add dry ingredients - flours, baking powder and vanilla pudding
mix. Sift together and mix well. 
3. In another bowl beat the eggs with stevia, and vanilla until creamy. Add remaining ingredients except for poppyseeds. 
4. When all ingredients are well incorporated fold in the poppyseeds. 
5. Using 1/4 cup measure fill muffin tins and bake for approx. 45mins, until toothpick comes out clean.
