Recipe makes 12 muffins

**WW points and Calories/Macros vary depending on the brands of ingredients you use.  It is suggested that if you follow a diet plan that you enter your ingredients into your tracker for accuracy. 

Ingredients:

1 can corn (I used Peaches and Cream)
1/4 cup unsweetened almond milk
1 tsp salt
1/2 tsp garlic powder
1/2 tsp dried parsley
2 eggs, beaten
2 tsp baking powder
1 1/4 cups of corn meal
30gm Light Marble cheese

1. Preheat oven to 375 and prepare your muffin tin. I used a silicone pan.
2. In a blender add the corn and almond milk, pulse until it is slightly creamy in texture. Pour into a bowl.
3. In the bowl add to the corn mixture - beaten eggs, salt, garlic powder and parsley. Mix well. 
4. Add the corn meal and baking powder. Mix well. 
5. Fill the tins almost all of the way to the top. Evenly sprinkle the cheese over top the muffins and bake for 20mins.
