Pineapple Oat cake

Pineapple Oat Cake

Ingredients:

1 398ml can of pineapple tidbits in pineapple juice
3 eggs
1-2 oz of your favourite skinny syrup (I like to use 1oz of white chocolate and 1oz salted caramel
2 cups oat flour 
2 tsp baking powder
1 1/2 tsp cinnamon
2 Tbsp unsweetened coconut
I don't add additional sweetener but if you aren't using the skinny syrup you can replace it with sweetener of your choice, or sugar free maple syrup.

1. Preheat oven to 375, spray a 9x13 pan with cooking spray.
2. In a blender blend up the pineapple with the juice until smooth.
3. Add the eggs and skinny syrup and continue blending until thoroughly combined. 
4. In a separate bowl add dry ingredients - oat flour, baking powder, cinnamon and mix to combine. 
5. Slowly start adding the blended ingredients to the flour mixture, continuously mixing. Add the coconut and stir to evenly mix everything together. 
6. Pour into pan and I sprinkle mine with a cinnamon/Stevia mix. 
7. Bake for 35mins and let rest before cutting.
