Ingredients: 

1 medium onion, diced
1 tbsp minced garlic
1 tsp minced ginger
1-2 Tbsp red curry paste
1 carton fat free vegetable broth
8 cups of water
1 head of cauliflower, chopped
1 Tbsp Vegeta seasoning
1 tsp white pepper
Salt to taste



1. In a large pot add onions, garlic, ginger and curry paste with 1/4 cup of broth.
Saute until onions are soft. 
2. Add in the rest of the broth and water, as well as the chopped cauliflower. 
3. Mix in the vegeta, salt, and pepper. Bring to a boil, then lower heat to a simmer until the cauliflower is soft and cooked all the way through. 
4. Use a hand blender/mixer to puree the soup.
