Ingredients:
398ml can of sliced peaches in juice, no sugar
3 eggs
1 tsp vanilla
8tsp brown sugar
1 cup oat flour
1 1/2 cups oats
2 tsp baking powder
Cream:
1 1/2 cups fat free plain greek yogurt
1 pkg fat free vanilla pudding mix
1 tsp vanilla
2. In one bowl mix together the oat flour, oats and baking powder, set aside.
3. In a blender, blend up the peaches with the juice. Add the eggs and vanilla and blend until completely combined.
4. Add the peach mixture into the oat flour mixture and mix well.
5. In a separate bowl mix together the cream mixture. It will be thick, almost like a thick batter or frosting.
6. Pour the peach batter into the prepared pan and then drop spoonful's of the cream mixture on top of the peach batter evenly.
7. Bake for 30mins. Serve warm with ice cream or light cool whip.
