Ingredients:
4 Bell Peppers
1lb lean ground pork
1lb extra lean ground beef
1 med onion, diced
1 tbsp minced garlic
1 1/2 tsp Italian seasoning
1 tsp salt
1/2 tsp white pepper (or more depending on your taste)
1 can tomatoe sauce (approx 24oz)
1/2 container of Ricotta cheese, mixed with 1 beaten egg, with a dash of salt, pepper and Italian seasoning
1 cup shredded mozzarella cheese
1. Preheat oven to 375. Spray a 9x13 pan with cooking spray and spread a thin layer of tomatoe sauce in bottom of pan.
2. Cut peppers in half, lengthwise, remove seeds and place them in the pan. Put pan in the oven while you start cooking the meat sauce.
3. In a pan add diced onion, ground pork and beef. Cook for 15 mins, until meat is cooked through. Add minced garlic and other seasonings.
4. Pour in the tomatoe sauce and simmer for 5mins. Remove peppers from oven.
5. In the peppers, layer meat sauce, the ricotta mixture, and then another layer of meat sauce, and top with mozzarella cheese.
6. Return to oven and bake for about 15mins. Remove from oven and enjoy.
